If they allowed all of the jailbreak stuff, iOS would become really dangerous. An app might remove your keyboard, catch all gestures, etc. it might be a bug in that software or a milicous attack. Then people will blame Apple. When you jailbreak, you know that your taking your own risk. Even the really common jailbreak apps crash a lot on my iPod, but not my iPad. So it's not like they are coded very well. If you've ever done system programming before, you would know how hard it is to get everything right. So "normal" apps use Apple's API for buttons, list, etc. providing a stable OS. Also if we allow apps to do whatever they want, it then removes a lot of jailbreaks. My winterboard and color keyboard don't work on jailbreak apps because they don't use the Apple API but their own interface.

I love flat UI. And now that Steve Jobs is dead, Apple isn't the same stubborn, invoative, company it was. Sooner or later another genius will come and replace it, or perhaps work for Apple. It'll become the new blackberry, cool, trendy, but eaisly overthrown with something new.

That said, iOS 7 is amazing to me. It brings the Flat UI I love (I told Arron I wish iOS was flat a year or two ago), transparent NC (I used to JB for that), Web OS app switcher (closest I could get was auxo), really nice looking folders though I wish they were bigger, and a lot of other common sense design features (like the way iPhone apps run on iPad, they now have the wallpaper in BG).

Right and I agree windows UI sucks. Because the interfaces I want are never there when I want them. For example windows 8 has a three part process to shutdown the computer, three things, one action. So they are giving you more space and only showing UI elements when available and grouping them with the content. Now the dialer isn't a keypad, if you compare ios6 and 7, in 7 they look like buttons instead of a keyboard UI.

Too LNG, didn't read. But the OS depends on the section if government and when the project was made. DoD uses Linux, but the rest tend to use Windows.
